Ingredients
- 2 tablespoons butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2½ cups fresh tomatoes, diced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth or vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon dried thyme
- ¼ cup grated Parmesan cheese (optional)
- ¼ cup chopped fresh basil
- Fresh parsley for garnish (optional)
Instructions
- Sauté the Vegetables
Melt the butter in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until softened. Stir in the garlic and cook for another 30 seconds. - Cook the Tomatoes
Add the diced tomatoes and cook for about 5 minutes until they soften and release their juices. - Add the Rice
Stir in the uncooked rice, mixing well so every grain is coated with the tomato mixture. - Season
Pour in the broth and add the salt, pepper, paprika, and thyme. Bring the mixture to a gentle boil. - Simmer
Reduce the heat to low, cover, and cook for 18–20 minutes, or until the rice is tender and the liquid has been absorbed. - Rest
Remove from the heat and let the skillet stand, covered, for 5 minutes. - Finish
Fluff the rice with a fork, then stir in the Parmesan cheese, if using, along with the chopped fresh basil. - Serve
Garnish with fresh parsley or extra basil and serve warm.

- Use ripe summer tomatoes for the best flavor.
- Vegetable broth makes this recipe vegetarian-friendly.
- Fresh basil should be added at the end to keep its bright flavor.
