- 4 boneless pork chops (about 1 inch thick)
- 4 pineapple rings
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/3 cup brown sugar
- 1/4 cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Season both sides of the pork chops with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat and sear the pork chops for about 2–3 minutes per side until nicely browned.
- Transfer the pork chops to a lightly greased baking dish.
- In the same skillet, melt the butter and cook the onion for 3–4 minutes until softened.
- Add the garlic and cook for 30 seconds.
- Stir in the brown sugar, pineapple juice, soy sauce, Dijon mustard, and Worcestershire sauce. Simmer for 2–3 minutes until slightly thickened.
- Pour the sauce evenly over the pork chops.
- Place one pineapple ring on top of each pork chop.
- Bake uncovered for 20–25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Broil for the final 2–3 minutes to lightly caramelize the pineapple.
- Let rest for 5 minutes before serving. Spoon extra sauce over each pork chop and garnish with parsley if desired.
