Ingredients
- 6 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 tablespoons flour
- 4 cups chicken broth
- 5 medium russet potatoes, peeled and diced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper, to taste
- Green onions, for garnish (optional)
Instructions
- In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving about 2 tbsp of the drippings.
- Add diced onion and garlic to the pot and sauté until soft and fragrant, about 3–4 minutes.
- Sprinkle in flour and stir constantly for 1–2 minutes to create a roux.
- Gradually whisk in the chicken broth. Add the diced potatoes and bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
- Use a potato masher to gently mash some of the potatoes for a thicker texture (leave some chunks!).
- Stir in heavy cream, cheddar cheese, and sour cream until smooth and melted. Season with salt and pepper to taste.
- Top with crispy bacon and optional green onions. Serve hot!

- Refrigerator: Store in an airtight container for up to 3 days.
- Freezer: Not recommended due to dairy separation when thawed.
- Reheat: Warm on the stovetop over low heat, stirring occasionally.
