Ingredients
- 1/2 cup (1 stick) butter
- 1 cup milk
- 3/4 cup all-purpose flour
- 1 tablespoon sugar
- 4 large eggs
- Cinnamon sugar (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin well.
- In a saucepan over medium heat, melt the butter and add milk. Bring just to a boil.
- Remove from heat and quickly stir in the flour and sugar all at once. Stir until a smooth dough forms and pulls away from the sides.
- Let the mixture cool slightly, then beat in the eggs one at a time until the batter is smooth and glossy.
- Spoon the batter evenly into the muffin cups, filling them about 2/3 full.
- Bake for 25–30 minutes, or until puffed and golden. Don’t open the oven during baking!
- Optional: sprinkle with cinnamon sugar while warm. Serve immediately.
Tips & Notes
- Serve warm for the best texture — crisp outside and custardy inside.
- Don’t overmix after adding the eggs, or the batter may deflate.
- Great on their own or with jam, whipped cream, or honey butter.
