Ingredients
- 1 ½ lbs boneless skinless chicken breasts or thighs
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 2 cups potatoes, diced
- 1 cup green beans or peas
- 6 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or Italian seasoning
- 2 cloves garlic, minced
- Optional: fresh parsley for garnish
Instructions
- Add chicken, carrots, celery, onion, potatoes, green beans, and garlic to the crock pot.
- Pour in chicken broth and season with salt, pepper, and thyme.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred with two forks, then return it to the soup.
- Stir well, taste, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
