Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 3 large carrots, sliced
- 3 celery stalks, sliced
- 1/2 medium green cabbage, chopped (about 5 cups)
- 1 can (14.5 oz) diced tomatoes, undrained
- 8 cups low-sodium vegetable or chicken broth
- 1 teaspoon Italian seasoning
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper, plus more to finish
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook for 4–5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add carrots, celery, and chopped cabbage. Stir well and cook for 5 minutes.
- Add diced tomatoes with juices, broth, Italian seasoning, bay leaf, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Remove the bay leaf.
- Stir in fresh parsley and finish with extra black pepper if desired.
