Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 3/4 cup orzo pasta
- 1 (15 oz) can white beans or chickpeas, drained and rinsed
- 2 cups fresh spinach or kale, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Zest and juice of 1 lemon
- Salt and black pepper, to taste
- Optional: fresh parsley or dill for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Pour in vegetable broth and bring to a gentle boil.
- Add orzo and cook for 8–10 minutes, stirring occasionally.
- Stir in beans, spinach or kale, oregano, and thyme.
- Simmer for 3–5 minutes until greens are wilted and soup is hearty.
- Remove from heat and stir in lemon zest and lemon juice.
- Season with salt and pepper to taste and serve hot.
Tips & Variations
- Use chicken broth instead of vegetable broth if not vegetarian.
- Add zucchini or bell peppers for extra veggies.
- For a creamier texture, stir in a splash of coconut milk or cream.
