Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (10 oz) can red enchilada sauce
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 8 small flour or corn tortillas, cut into quarters
- 2 cups shredded Mexican blend cheese
- Optional toppings: chopped cilantro, sour cream, jalapeños
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, cook ground beef and diced onion over medium heat until browned. Drain excess fat.
- Add garlic and taco seasoning. Stir for 1 minute, then mix in enchilada sauce and diced tomatoes. Simmer for 5 minutes.
- Layer half of the tortillas in the bottom of the dish. Spread half of the beef mixture over them, followed by half of the shredded cheese.
- Repeat layers with remaining tortillas, beef mixture, and cheese.
- Bake uncovered for 25–30 minutes or until hot and bubbly.
- Let sit for 5–10 minutes before serving. Garnish with desired toppings.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven. This dish also freezes well for up to 2 months.
