Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1½ cups dried lentils, rinsed
- 6 cups vegetable or chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 bay leaf
- Salt and black pepper, to taste
- Optional: lemon juice or fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 6–7 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add lentils, broth, diced tomatoes, cumin, smoked paprika, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 35–40 minutes until lentils are tender.
- Remove bay leaf and adjust seasoning as needed.
- For a thicker texture, lightly mash some lentils with the back of a spoon.
- Serve hot with a squeeze of lemon juice or fresh parsley if desired.
