Ingredients
For the Sausage Gravy
- 1 pound pork breakfast sausage
- 3 tablespoons salted butter
- 1/4 cup all-purpose flour
- 2 3/4 cups whole milk
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
For the Casserole
- 1 can (8-count) refrigerated biscuit dough
- 6 large eggs
- 1/3 cup whole milk
- 1/2 teaspoon onion powder
- 2 cups shredded cheddar cheese
- Fresh chopped parsley (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook the sausage in a large skillet over medium heat until browned, breaking it into crumbles. Drain excess grease if needed.
- Add the butter and melt completely. Sprinkle in the flour and cook for 1 minute while stirring.
- Slowly whisk in the whole milk until smooth. Stir continuously until the gravy thickens.
- Season the gravy with kosher salt and black pepper. Remove from the heat.
- Cut each biscuit into quarters and spread them evenly in the prepared baking dish.
- In a bowl, whisk together the eggs, 1/3 cup milk, and onion powder.
- Pour the egg mixture evenly over the biscuits.
- Spoon the sausage gravy over the eggs and biscuits.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 35–40 minutes, or until the eggs are fully set, the biscuits are cooked through, and the cheese is melted and golden.
- Allow the casserole to rest for 5 minutes before slicing and serving. Garnish with parsley if desired.

- Use spicy breakfast sausage for extra flavor.
- Add cooked bacon or diced jalapeños for a delicious variation.
- Prepare the casserole the night before and refrigerate until ready to bake.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual servings in the microwave or warm the entire casserole in a 325°F oven until heated through.
