- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup crushed pineapple, well drained
- 1 teaspoon vanilla extract
- 1/2 cup pineapple juice (from canned pineapple)
Instructions
- Preheat oven to 325°F (165°C). Grease and flour a Bundt or loaf pan.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the batter, alternating with pineapple juice. Mix just until combined.
- Fold in crushed pineapple and vanilla extract.
- Pour batter into prepared pan and smooth the top.
- Bake for 70–75 minutes, or until a toothpick inserted comes out clean.
- Let cake cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
