Southern Fried Cornbread (Cornmeal Hoecakes)

Ingredients
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 2 tablespoons vegetable oil (plus more for frying)
Instructions
- In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In another bowl, whisk the buttermilk, egg, melted butter, and vegetable oil until well combined.
- Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms. Let the batter rest for 5 minutes.
- Heat a thin layer of vegetable oil in a large cast-iron skillet over medium heat.
- Scoop about 1/4 cup of batter into the hot skillet for each hoecake and gently flatten slightly with the back of a spoon.
- Cook for 3 to 4 minutes per side until deep golden brown and crispy.
- Transfer to a paper towel-lined plate to drain any excess oil.
- Serve warm with butter, honey, maple syrup, or alongside your favorite Southern meal.
Tips
- Use a cast-iron skillet for the crispiest crust.
- Do not overcrowd the pan while frying.
- Adjust the heat if the hoecakes brown too quickly.
