Ingredients
- 1 tablespoon coconut oil or olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon red curry paste (adjust to taste)
- 4 cups chicken broth
- 1 (13.5 oz) can full-fat coconut milk
- 1 lb boneless skinless chicken breast or thighs, thinly sliced
- 1 cup mushrooms, sliced

- Juice of 1 lime

Instructions
- Heat coconut oil in a large pot over medium heat.
