Stuffed Mushrooms

Ingredients
- 20 whole white mushrooms, cleaned and stems removed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup finely chopped mushroom stems
- 1/2 cup cream cheese, softened
- 1/3 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped (plus more for garnish)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté garlic and chopped mushroom stems for 3–4 minutes until soft. Let cool slightly.
- In a mixing bowl, combine cream cheese, Parmesan, breadcrumbs, parsley, and the cooled mushroom mixture. Season with salt and pepper.
- Fill each mushroom cap with the cheese mixture and place them on the prepared baking sheet.
- Bake for 18–20 minutes until mushrooms are tender and the tops are golden brown.
- Garnish with extra chopped parsley and serve warm.
Tips
- Make ahead: Stuff the mushrooms and refrigerate for up to 8 hours before baking.
- Optional: Add crumbled cooked sausage or chopped spinach for extra flavor.
