Ingredients
- 1 refrigerated pie crust (or homemade)
- 5 cups sliced fresh or canned peaches (drained)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 2 tbsp butter, cut into small pieces
Cobbler Topping
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
Instructions
- Preheat oven to 375°F (190°C). Place pie crust into a 9-inch pie dish and crimp the edges. Set aside.
- In a large bowl, combine sliced peaches, both sugars, cinnamon, nutmeg, cornstarch, vanilla, and lemon juice. Mix gently and pour into prepared crust. Dot with butter.
- In another bowl, mix flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
- Spoon the topping evenly over the peach filling.
- Bake for 45–55 minutes, or until the topping is golden and the filling is bubbly.
- Let cool for 20 minutes before serving. Great with a scoop of vanilla ice cream!
