Ingredients
- 1 lb beef stew meat, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 3/4 cup pearl barley, rinsed
- 6–7 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Return beef to the pot and add barley, beef broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 60–75 minutes, stirring occasionally, until beef is tender and barley is cooked.
- Remove bay leaf, taste, and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
