Ingredients

- 4 oz semisweet chocolate, chopped
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat eggs and sugar until pale and fluffy. Mix in oil, buttermilk, and vanilla.
- Sift in cocoa powder, flour, baking powder, and salt. Fold gently until smooth.
- Pour into the prepared pan, spread evenly, and bake for 10–12 minutes.
- While warm, invert cake onto a clean kitchen towel dusted with powdered sugar. Gently roll up (with the towel) and let cool completely.
- Make the frosting: In a saucepan, whisk evaporated milk, sugar, butter, and egg yolks. Cook over medium heat until thickened (about 10 minutes). Stir in coconut, pecans, and vanilla. Let cool.
- Unroll the cake, spread the filling evenly, and re-roll (without towel). Chill for 30 minutes before topping.
- For ganache: Heat cream and pour over chocolate. Stir until smooth. Pour over the cake roll and let set before slicing.
