Ingredients
- 12 oz spaghetti
- 2 cups cooked chicken, shredded or cubed
- 1 (10 oz) can Rotel tomatoes (with green chilies)
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup chicken broth or pasta water
- 2 cups shredded cheddar cheese, divided
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Chopped parsley or green onions, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cook spaghetti according to package directions until al dente. Drain and set aside.
- In a large bowl, mix cream of chicken soup, Rotel, sour cream, chicken broth, garlic powder, salt, and pepper until smooth.
- Stir in the cooked spaghetti and shredded chicken. Add 1½ cups of the cheese and mix until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with the remaining ½ cup of cheddar cheese.
- Bake uncovered for 25–30 minutes, or until hot and bubbly.
- Garnish with chopped parsley or green onions, if desired. Serve hot!
