Ingredients

- 1 small onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked shredded or diced chicken
- 2 cups egg noodles (uncooked)

- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté for about 5 minutes until vegetables begin to soften.
- Add garlic and thyme; cook for 1 more minute until fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add the egg noodles and cook for about 8–10 minutes, or until just tender.
- Stir in the cooked chicken and heavy cream. Let it simmer for 5 minutes.
- If you want a thicker soup, stir in the cornstarch slurry and simmer for 2 more minutes until thickened.
- Season with salt and pepper to taste. Garnish with fresh parsley if desired.
