- 1 cup coconut milk
- 1 cup sour cream

- 1 1/2 cups sweetened shredded coconut

- 1/2 teaspoon salt
For the Seven-Minute Frosting
- 1 1/2 cups granulated sugar
- 4 egg whites
- 1/3 cup water
- 1 tablespoon light corn syrup
- 1 teaspoon vanilla extract
- Extra shredded coconut for garnish
Directions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in coconut extract and vanilla extract.
- In another bowl, whisk cake flour, baking powder, and salt.
- Add dry ingredients to the butter mixture alternately with coconut milk, sour cream, and milk until smooth.
- Fold in shredded coconut.
- Divide batter evenly between prepared pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
- Cool cakes completely before frosting.
- For the frosting, combine sugar, egg whites, water, and corn syrup in a heatproof bowl over simmering water.
- Beat continuously with a hand mixer for about 7 minutes until glossy stiff peaks form.
- Remove from heat, stir in vanilla extract, and frost cake immediately.
