Ingredients
For the Carrot Cake
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- ½ cup vegetable or canola oil
- 1 teaspoon vanilla extract
- 2 cups freshly grated carrots
- ½ cup chopped pecans
For the Cream Cheese Frosting
- 8 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Oven
Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper. - Mix the Dry Ingredients
In a large bowl whisk together the flour, granulated sugar, brown sugar, baking soda, salt, and cinnamon. - Combine the Wet Ingredients
In another bowl whisk the eggs, oil, and vanilla until smooth. - Make the Batter
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated carrots and chopped pecans without overmixing. - Bake
Transfer the batter to the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. - Cool Completely
Allow the loaf to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely. - Prepare the Frosting
Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla, then continue beating until light and creamy. - Finish and Serve
Spread the frosting evenly over the cooled loaf. Sprinkle with additional chopped pecans if desired before slicing and serving.
