Donut Batter

  • 1¾ cups self-rising flour
  • ¾ cup plus 2 tablespoons granulated sugar

  • ½ teaspoon mixed spice
  • ¾ cup milk
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 medium sweet apples, peeled and finely diced

Cinnamon Icing

  • ⅔ cup powdered sugar, sifted
  • ¼ teaspoon ground cinnamon
  • 1–2 tablespoons water

Instructions

  1. Prepare the Oven
    Preheat the oven to 350°F (175°C). Grease a 12-cavity donut pan well.
  2. Make the Crumble
    Mix the flour, brown sugar, and cinnamon. Cut in the cold butter until coarse crumbs form. Refrigerate while preparing the batter.
  3. Mix the Dry Ingredients
    Whisk together the self-rising flour, sugar, cinnamon, and mixed spice. Reserve 1–2 teaspoons of the flour mixture for the apples.
  4. Mix the Wet Ingredients
    Whisk together the milk, vegetable oil, and eggs until smooth.

    Pour the wet ingredients into the dry ingredients and stir just until combined.
  6. Add the Apples
