Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 8 oz semi-sweet chocolate, melted and cooled
- 3 large eggs
- 1 cup sweetened shredded coconut
- 3/4 cup chopped pecans
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup evaporated milk
- 3 egg yolks
- 1/4 cup butter
- 1 teaspoon vanilla extract (for topping)
Instructions
- Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment and grease lightly.
- Mix cookie crumbs with melted butter and press into the bottom of the pan. Bake for 10 minutes, then let cool.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, and melted chocolate.
- Add eggs one at a time, beating just until combined. Pour batter over crust.
- Bake for 55–60 minutes until center is set. Turn off oven, crack door open, and let cheesecake cool slowly. Refrigerate for at least 4 hours.
- To make the topping: In a saucepan, combine sweetened condensed milk, evaporated milk, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened (about 10 minutes).
- Remove from heat, stir in coconut, pecans, and vanilla. Cool completely.
- Spread topping evenly over chilled cheesecake. Slice and serve!
Storage
Store covered in the refrigerator for up to 5 days. You can freeze slices (without topping) for up to 2 months and add the topping after thawing.
