Ingredients
For the Cinnamon Swirl
- ⅓ cup light brown sugar
- 2 teaspoons ground cinnamon
For the Bread Batter
- ½ cup (1 stick) unsalted butter, softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1¾ teaspoons baking powder
- ½ cup milk
For the Apple Filling
- 1½ cups peeled and diced apples
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Optional Vanilla Glaze
- ½ cup powdered sugar
- 1–2 tablespoons milk or heavy cream
- ¼ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix the brown sugar and cinnamon together in a small bowl to make the swirl mixture.
- In another bowl, combine the chopped apples with the granulated sugar and cinnamon until evenly coated.
- Beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, then mix in the vanilla extract.
- Whisk together the flour and baking powder in a separate bowl.
- Add the dry ingredients to the butter mixture alternately with the milk, mixing just until combined.
- Spread half of the batter into the prepared loaf pan.
- Top with half of the apple mixture and sprinkle with half of the cinnamon swirl mixture.
- Repeat with the remaining batter, apples, and cinnamon sugar. Lightly swirl with a knife for a marbled effect.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too quickly.
- Cool in the pan for 10–15 minutes before transferring to a wire rack.
- For the glaze, whisk together the powdered sugar, vanilla, and enough milk to make a smooth drizzle. Pour over the cooled loaf before slicing.
Tips
- Granny Smith apples provide the best balance of sweetness and tartness.
- Do not overmix the batter to keep the loaf soft and tender.
- Allow the bread to cool before glazing for the best appearance.
- Store covered at room temperature for up to 3 days.
