Ingredients

For the Cinnamon Swirl

  • ⅓ cup light brown sugar
  • 2 teaspoons ground cinnamon

For the Bread Batter

  • ½ cup (1 stick) unsalted butter, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • ½ cup milk

For the Apple Filling

  • 1½ cups peeled and diced apples
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Optional Vanilla Glaze

  • ½ cup powdered sugar
  • 1–2 tablespoons milk or heavy cream
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the brown sugar and cinnamon together in a small bowl to make the swirl mixture.
  3. In another bowl, combine the chopped apples with the granulated sugar and cinnamon until evenly coated.
  4. Beat the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, then mix in the vanilla extract.
  6. Whisk together the flour and baking powder in a separate bowl.
  7. Add the dry ingredients to the butter mixture alternately with the milk, mixing just until combined.
  8. Spread half of the batter into the prepared loaf pan.
  9. Top with half of the apple mixture and sprinkle with half of the cinnamon swirl mixture.
  10. Repeat with the remaining batter, apples, and cinnamon sugar. Lightly swirl with a knife for a marbled effect.
  11. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too quickly.
  12. Cool in the pan for 10–15 minutes before transferring to a wire rack.
  13. For the glaze, whisk together the powdered sugar, vanilla, and enough milk to make a smooth drizzle. Pour over the cooled loaf before slicing.

  • Granny Smith apples provide the best balance of sweetness and tartness.
  • Do not overmix the batter to keep the loaf soft and tender.
  • Allow the bread to cool before glazing for the best appearance.
