Ingredients
- 1½ lbs beef stew meat or lamb, cut into chunks
- 2 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tsp dried oregano
- ½ tsp ground cinnamon
- Salt and black pepper, to taste
- 1½ cups orzo pasta
- ½ cup crumbled feta cheese or grated Parmesan
- Fresh parsley, chopped
Instructions
- Heat olive oil in a large Dutch oven or deep pot over medium-high heat. Brown the meat on all sides, then remove and set aside.
- In the same pot, sauté the onion until softened. Add garlic and cook for 30 seconds until fragrant.
- Stir in crushed tomatoes, tomato paste, oregano, cinnamon, salt, and black pepper.
- Pour in the beef broth and return the browned meat to the pot. Cover and simmer for 1½–2 hours until the meat becomes tender.
- Add the orzo pasta and cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
- Sprinkle with feta cheese and fresh parsley before serving warm.
