Ingredients
- 2 cups cooked chicken breast, shredded or cubed
- 2 tablespoons olive oil or butter
- 1 small onion, chopped
- 3 cups fresh spinach
- 1½ cups sliced mushrooms
- 2 cloves garlic, minced
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- Salt and black pepper to taste
- Optional: grated Parmesan for topping
Instructions
- Preheat oven to 375°F (190°C). Grease a medium baking dish.
- In a skillet over medium heat, warm olive oil and sauté onions, mushrooms, and garlic until softened.
- Add spinach and cook until wilted. Stir in cream cheese and heavy cream. Season with salt and pepper.
- Stir in cooked chicken and half of the mozzarella cheese. Mix well to combine.
- Transfer to the prepared baking dish. Sprinkle remaining mozzarella (and Parmesan if using) on top.
- Bake for 20–25 minutes or until bubbly and golden. Let cool slightly before serving.
