Ingredients

  • 20 whole white mushrooms, cleaned and stems removed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup finely chopped mushroom stems
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and chopped mushroom stems for 3–4 minutes until soft. Let cool slightly.
  3. In a mixing bowl, combine cream cheese, Parmesan, breadcrumbs, parsley, and the cooled mushroom mixture. Season with salt and pepper.
  4. Fill each mushroom cap with the cheese mixture and place them on the prepared baking sheet.
  5. Bake for 18–20 minutes until mushrooms are tender and the tops are golden brown.
  6. Garnish with extra chopped parsley and serve warm.

Tips

  • Make ahead: Stuff the mushrooms and refrigerate for up to 8 hours before baking.
  • Optional: Add crumbled cooked sausage or chopped spinach for extra flavor.
