Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 2 eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 6–8 slices Swiss cheese
- Fresh parsley, chopped (optional garnish)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and black pepper. Mix gently until just combined.
- Shape the mixture into a loaf.
- In a skillet, melt butter over medium heat and cook sliced onions until soft and lightly caramelized, about 10–15 minutes.
- Place half of the onions in the bottom of the crockpot.
- Set the meatloaf on top, then cover with the remaining onions.
- Cover and cook on LOW for 5–6 hours, until fully cooked.
- During the last 15 minutes, place Swiss cheese slices over the top and cover again until melted.
