- 1 lb ground beef
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 2 potatoes, peeled and diced
- 3 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 cups shredded cheddar cheese
- 1 cup milk or heavy cream
- 2 tablespoons cream cheese (optional for extra creaminess)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Transfer cooked beef to the slow cooker.
- Add onion, carrots, celery, zucchini, bell pepper, potatoes, beef broth, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender.
- About 20 minutes before serving, stir in shredded cheddar cheese, milk or cream, and cream cheese if using.
- Stir until melted, creamy, and fully combined.
