Ingredients
- 1 lb beef stew meat, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 cups potatoes, diced
- 1 cup green beans or peas
- 1 (14.5 oz) can diced tomatoes
- 6 cups beef broth
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or Italian seasoning
- 1 bay leaf
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Return beef to the pot and add potatoes, green beans, diced tomatoes, and beef broth.
- Add salt, pepper, thyme, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 50–60 minutes until beef is tender.
- Remove bay leaf, taste, and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
