  • 1 pound ground beef (80/20)
  • ½ cup plain breadcrumbs
  • ¼ cup barbecue sauce, plus extra for topping
  • 1 cup shredded cheddar cheese
  • 4 slices crispy bacon, crumbled
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Extra shredded cheddar cheese, for topping
  • Extra crispy bacon strips, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or small baking dish.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, barbecue sauce, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Fold in the shredded cheddar cheese and crumbled bacon until evenly distributed.
  4. Shape the mixture into one loaf or divide it into slider-sized portions and place them in the prepared baking dish.
  5. Brush the top lightly with additional barbecue sauce.
  6. Bake for 30 to 35 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Top with extra cheddar cheese during the last 5 minutes of baking and return to the oven until melted.
  8. Garnish with crispy bacon strips and allow the meatloaf to rest for 5 minutes before slicing.
