Ingredients
- 4 flour tortillas (soft taco size)
- 4 oz cream cheese, softened
- 2 tbsp sugar (or honey)
- 1/2 tsp vanilla extract
- 1 cup fresh or frozen blueberries
- Butter or oil for the pan
- Powdered sugar or maple syrup (for serving)
Instructions
- In a small bowl, mix softened cream cheese, sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture over two of the tortillas. Top with blueberries, then cover each with a second tortilla to form quesadillas.
- Heat a skillet over medium heat and lightly butter or oil it.
- Place each quesadilla in the skillet and cook for 2–3 minutes per side until golden brown and crisp.
- Remove from heat and let cool slightly. Cut into wedges and serve warm with powdered sugar or maple syrup.
