Ingredients
For the Crust:
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup (1 stick) unsalted butter, melted
For the Filling:
- 2 packages (8 oz each) cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 tablespoons all-purpose flour
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of the prepared pan. Bake for 8 minutes, then set aside to cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
- Mix in flour, lemon juice, lemon zest, and vanilla until fully combined and smooth.
- Pour the filling over the crust and spread evenly.
- Bake for 25–30 minutes, or until the center is set but still slightly jiggly. Let cool completely, then refrigerate for at least 3 hours.
- Cut into squares and serve chilled. Optionally, dust with powdered sugar or top with a lemon twist.
