Ingredients
- 4 boneless, skinless chicken breasts
- 2 large yellow onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 cup beef broth
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1½ cups shredded mozzarella cheese
- ½ cup grated Gruyère or Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and onions. Sauté for 15–20 minutes until deeply golden and caramelized, stirring occasionally. Add balsamic vinegar and beef broth, simmer for another 3 minutes. Set aside.
- Season chicken breasts with garlic powder, thyme, salt, and pepper. Place in a greased baking dish.
- Top each chicken breast with a generous spoonful of the caramelized onion mixture, then sprinkle mozzarella and Gruyère on top.
- Bake uncovered for 25–30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
- Garnish with chopped parsley and serve hot with mashed potatoes, rice, or a side salad.
