Bacon Jalapeño Popper Egg Rolls

Bacon Jalapeño Popper Egg Rolls are crispy, golden appetizers filled with creamy cheese, sharp cheddar, smoky bacon, and fresh jalapeños. The crunchy wrapper and warm, cheesy center make these egg rolls perfect for parties, game days, family gatherings, or whenever you want an easy savory snack with a little heat.

Ingredients

  • 7–8 egg roll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 5 slices bacon, cooked and chopped
  • 2 jalapeños, finely diced
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Oil, for frying

Instructions

  1. Cook the bacon until crisp. Transfer it to a paper towel-lined plate to remove excess grease, then chop it into small pieces.
  2. Place the softened cream cheese in a medium mixing bowl. Add the shredded cheddar cheese, cooked bacon, diced jalapeños, garlic powder, onion powder, salt, and black pepper.
  3. Mix everything thoroughly until the bacon, jalapeños, and seasonings are evenly distributed throughout the cheese filling.
  4. Place one egg roll wrapper on a clean work surface with one corner pointing toward you. Spoon a portion of the jalapeño popper filling near the center of the wrapper.
  5. Lightly moisten the edges of the wrapper with water. Fold the left and right corners toward the center, then bring the bottom corner over the filling.
  6. Roll the wrapper tightly toward the remaining corner. Press the moistened edge firmly to seal. Repeat with the remaining wrappers and filling.
  7. Pour enough frying oil into a deep skillet or saucepan to reach approximately 1 inch deep. Heat the oil to 350°F (175°C).
  8. Carefully add a few egg rolls at a time without overcrowding the pan. Fry for approximately 1–2 minutes per side, turning as necessary, until crisp and evenly golden brown.
  9. Remove the cooked egg rolls with a slotted spoon and place them on a paper towel-lined plate or wire rack to drain excess oil.
  10. Allow them to cool for a few minutes before serving because the cheese filling will be very hot. Serve warm with your favorite dipping sauce.

Tips for Crispy Egg Rolls

Keep the wrappers covered with a slightly damp kitchen towel while assembling the egg rolls so they do not dry out. Avoid adding too much filling because overfilled wrappers are more likely to split during frying.

Make sure each egg roll is sealed tightly before it goes into the oil. Maintaining the oil temperature around 350°F also helps produce a crisp exterior without making the wrappers excessively greasy.

Adjusting the Jalapeño Heat

For a milder filling, remove the seeds and inner membranes from the jalapeños before chopping them. If you enjoy more heat, leave some of the seeds and membranes intact or add a little extra jalapeño.

Serving Suggestions

Serve these crispy egg rolls with ranch dressing, a creamy garlic dip, chipotle sauce, or another favorite dipping sauce. They are especially good served immediately while the wrappers are crunchy and the cheese filling is warm and creamy.

Make-Ahead Instructions

The cheese filling can be prepared several hours ahead and refrigerated in a covered container. You can also assemble the egg rolls ahead of time and keep them covered in the refrigerator until you are ready to fry them.

Storage and Reheating

Store leftover cooked egg rolls in an airtight container in the refrigerator for up to 3 days. For the best texture, reheat them in an oven or air fryer until the outside becomes hot and crisp again.

Frequently Asked Questions

Can I use another type of cheese?

Yes. Monterey Jack, pepper Jack, or a combination of cheddar and Monterey Jack can be used in place of some or all of the cheddar.

Can I make these less spicy?

Yes. Remove the jalapeño seeds and membranes and use only one jalapeño for a noticeably milder version.

Why are my egg rolls opening while frying?

This usually happens when the wrappers are overfilled or the final edge is not sealed securely. Use a small amount of water along the edge and press firmly before frying.

Can I prepare the filling in advance?

Yes. Prepare the filling, cover it tightly, and refrigerate until you are ready to assemble the egg rolls.
