Hamburger, Potato, Corn & Tomato Soup
A simple, hearty one-pot meal made with seasoned ground beef, tender
potatoes, sweet corn, and a savory tomato broth. This comforting
old-fashioned recipe is easy to prepare and perfect for a family dinner.
Ingredients
- 1 lb ground beef
- 1 cup potatoes, cut into ½-inch cubes
- ½ cup onion, finely diced
- 1 can whole-kernel sweet corn, drained
- 2 tbsp chicken bouillon
- ⅓ cup tomato sauce
- 2 cups water, plus more as needed
- Salt and black pepper, to taste
Method
- Place the ground beef in a large pot over medium heat. Cook until
browned, breaking the meat into small crumbles as it cooks. - Drain off the excess grease, then add the diced onion. Cook for
2–3 minutes until the onion begins to soften. - Pour in the water and tomato sauce. Add the chicken bouillon and stir
until well combined. - Taste the broth and add a little more bouillon or tomato sauce if
desired. - Add the diced potatoes and drained corn. Stir everything together and
bring the mixture to a gentle simmer. - Cover and cook over medium-low heat for 20–25 minutes, stirring
occasionally to prevent sticking. - If too much liquid evaporates while cooking, add a little more water
until the soup reaches your preferred consistency. - Once the potatoes are completely tender, taste and season with salt and
black pepper as needed.
Serving
Serve hot in bowls with crusty bread, warm rolls, or cornbread on the
side. Store leftovers covered in the refrigerator for up to 3 days.
