Crumble Topping

Donut Batter

- 1¾ cups self-rising flour
- ¾ cup plus 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon mixed spice
- ¾ cup milk
- 2 tablespoons vegetable oil
- 2 large eggs
- 2 medium sweet apples, peeled and finely diced
- 1–2 teaspoons self-rising flour (for coating apples)
Cinnamon Icing
- ⅔ cup powdered sugar, sifted
- ¼ teaspoon ground cinnamon
- 1–2 tablespoons water
Instructions
- Prepare the Oven
Preheat the oven to 350°F (175°C). Grease a 12-cavity donut pan well. - Make the Crumble
Mix the flour, brown sugar, and cinnamon. Cut in the cold butter until coarse crumbs form. Refrigerate while preparing the batter. - Mix the Dry Ingredients
Whisk together the self-rising flour, sugar, cinnamon, and mixed spice. Reserve 1–2 teaspoons of the flour mixture for the apples. - Mix the Wet Ingredients
Whisk together the milk, vegetable oil, and eggs until smooth. - Prepare the Batter
Pour the wet ingredients into the dry ingredients and stir just until combined. - Add the Apples
Toss the diced apples with the reserved flour, then gently fold them into the batter. - Fill the Pan
Divide the batter evenly among the prepared donut cavities, filling each about three-quarters full. - Add the Crumble
Sprinkle the crumble topping evenly over each donut, pressing lightly so it sticks. - Bake
Bake for 15 minutes. Increase the oven temperature to 375°F (190°C) and bake for another 5 minutes, or until golden and a toothpick comes out clean. - Cool
Allow the donuts to cool in the pan for 5 minutes before transferring to a wire rack. - Prepare the Icing
Whisk together the powdered sugar, cinnamon, and enough water to create a smooth drizzle. - Finish and Serve
