  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • ¼ cup heavy whipping cream
  • 1 container (8 oz) whipped topping, thawed
  • 1 cup roughly chopped circus animal cookies

For the Pink Ganache

  • 1 cup white chocolate chips
  • ⅓ cup heavy whipping cream
  • 1 drop pink gel food coloring (optional)
  • Rainbow non-pareil sprinkles

Optional Garnish

  • Whipped cream
  • Whole circus animal cookies
  • Extra rainbow sprinkles

Instructions

  1. Prepare the Pan
Lightly grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Make the Cookie Crust
Crush the circus animal cookies into fine crumbs. Mix with melted butter until evenly coated. Firmly press into the bottom and slightly up the sides of the pan. Freeze for 30 minutes.
  3. Prepare the Cheesecake Base
Beat the softened cream cheese, sugar, and vanilla until completely smooth and creamy.
  4. Melt the White Chocolate
Microwave the white chocolate chips with the heavy cream in 30-second intervals, stirring until smooth.
  5. Combine the Filling
Slowly mix the melted white chocolate into the cream cheese mixture until fully incorporated.
  6. Fold Everything Together
Gently fold in the whipped topping, then carefully stir in the chopped circus animal cookies.
  7. Fill and Chill
Spread the filling evenly over the chilled crust. Cover and refrigerate for at least 4 hours, preferably overnight.
  8. Make the Ganache
Heat the heavy cream until hot but not boiling. Pour over the white chocolate chips, let stand for 2 minutes, then stir until smooth. Add the pink food coloring if desired.
  9. Decorate
Pour the pink ganache over the chilled cheesecake and spread evenly. Immediately decorate with rainbow sprinkles.
  10. Serve
Pipe whipped cream around the edge and garnish with whole circus animal cookies before slicing and serving.

Tips for Success
