Ingredients
For the Cake
- 4 large eggs
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- Pinch of salt
For the Filling
- 1 cup heavy whipping cream
- 4 oz cream cheese, softened
- ¼ cup powdered sugar
- 2 bananas
For the Topping
- 1 cup chocolate chips
- ½ cup heavy cream
- Banana slices for garnish
- Mini chocolate chips for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
- Beat eggs and granulated sugar together until pale, fluffy, and doubled in size. Mix in vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gently fold dry ingredients into the egg mixture.
- Spread batter evenly into the prepared pan and bake for 10–12 minutes until the cake springs back lightly when touched.
- Turn the warm cake onto a clean kitchen towel dusted lightly with cocoa powder. Carefully roll the cake up in the towel and let cool completely.
- For the filling, beat cream cheese and powdered sugar until smooth. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Unroll the cooled cake gently and spread the filling evenly across the surface. Place bananas along one edge.
- Roll the cake tightly back into a log shape and place seam-side down.
- Heat heavy cream until hot but not boiling. Pour over chocolate chips and stir until smooth and glossy.
- Pour ganache over the cake roll and garnish with banana slices and mini chocolate chips.
- Chill for 30 minutes before slicing and serving.
Expert Tips
- Roll the cake while warm to prevent cracking.
- Chill the cake before slicing for cleaner swirls.
- Add chopped hazelnuts for extra crunch and flavor.
