Ingredients
- 2 lbs chicken thighs or breasts, bone-in and skin-on
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 3 large carrots, sliced
- 3 stalks celery, sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated or minced
- 1 teaspoon ground turmeric
- 1 bay leaf
- 8 cups high-quality chicken broth or bone broth
- 1/2 cup small pasta
- 1 lemon, juiced
- Fresh parsley and dill, chopped
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add onion, carrots, and celery. Cook for 6–7 minutes until softened.
- Stir in garlic, ginger, and turmeric. Cook for 30 seconds until fragrant.
- Add the chicken, bay leaf, and broth. Bring to a gentle boil.
- Reduce heat and simmer for 30–35 minutes, until chicken is fully cooked and tender.
- Remove the chicken from the pot. Discard skin and bones, then shred the meat and return it to the soup.
- Add the small pasta and simmer for 8–10 minutes, until tender.
- Stir in lemon juice and fresh parsley and dill.
- Season with salt and black pepper to taste.
- Serve hot.
