Ingredients
- 12 oz pasta (penne or shells)
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes, with juices
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and black pepper, to taste
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess grease if needed.
- Add diced onion and cook for 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add taco seasoning and diced tomatoes with their juices. Stir well and simmer for 3–4 minutes.
- Lower heat and stir in sour cream and shredded cheddar cheese until smooth and creamy.
- Add cooked pasta and toss until fully coated in the sauce.
- Season with salt and black pepper to taste and serve hot.
