- 1 tablespoon olive oil (if needed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup zucchini, diced
- 1 cup cauliflower florets, chopped
- 1/2 cup green beans, chopped
- 1 (14.5 oz) can diced tomatoes (no sugar added)
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- Optional: grated Parmesan cheese for serving
Instructions
- In a large pot over medium heat, cook ground beef until browned. Drain excess fat if needed.
- Add onion and cook for 4–5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add zucchini, cauliflower, and green beans. Cook for 3–4 minutes.
- Stir in diced tomatoes, tomato paste, beef broth, Italian seasoning, basil, and oregano.
- Bring to a gentle boil, then reduce heat and simmer for 20–25 minutes.
