Ingredients
- 6 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 medium russet potatoes, peeled and diced
- 4 cups green cabbage, chopped
- 4 cups chicken broth
- 1 cup milk or half-and-half
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- Optional: chopped fresh parsley for garnish
Instructions
- In a large pot over medium heat, cook the chopped bacon until crisp. Remove bacon and set aside, leaving drippings in the pot.
- Add onion to the bacon drippings and sauté for 4–5 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add diced potatoes, cabbage, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer uncovered for 30 minutes, or until potatoes are tender.
- Stir in milk or half-and-half and return the cooked bacon to the pot.
- Simmer for an additional 5 minutes. Taste and adjust seasoning.
- Serve hot, garnished with fresh parsley if desired.
