Ingredients
- 1 cup uncooked long grain white rice
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 lb boneless, skinless chicken breasts (or thighs), cut into chunks or strips
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together the chicken broth, cream of chicken soup, sour cream, garlic powder, onion powder, and pepper.
- Stir in the uncooked rice until well mixed.
- Pour mixture into a greased 9×13-inch baking dish.
- Top with the raw chicken pieces, spreading them evenly over the rice mixture.
- Cover tightly with aluminum foil and bake for 50–55 minutes, or until the rice is tender and chicken is cooked through.
- Remove foil, sprinkle with cheese, and return to oven uncovered for 5–10 minutes, until cheese is melted and bubbly.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.
Tips & Variations
- You can add frozen peas, carrots, or broccoli to the mix for added veggies.
- Use rotisserie chicken and pre-cooked rice for a quicker version — reduce baking time accordingly.
- Swap cream of chicken for cream of mushroom or celery for a different flavor base.
