Turmeric Chicken Soup

Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1½ teaspoons ground turmeric
- 1 teaspoon ground cumin
- 3 carrots, peeled and chopped
- 2 celery stalks, diced
- 1½ pounds boneless chicken thighs or breasts
- 6 cups low-sodium chicken broth
- 1 bay leaf
- Salt and black pepper, to taste
- 1 cup baby spinach or kale (optional)
- Juice of half a lemon
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and sauté until soft, about 5 minutes.
- Stir in garlic, ginger, turmeric, and cumin. Cook for 1–2 minutes until fragrant.
- Add carrots and celery, cook another 2–3 minutes.
- Place the chicken into the pot. Pour in the broth and add bay leaf. Bring to a boil, then reduce to a simmer.
- Cover and simmer for 25–30 minutes until the chicken is tender and cooked through.
- Remove the chicken, shred with two forks, then return it to the soup.
- Stir in spinach or kale if using, and cook just until wilted. Add lemon juice. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve warm.
