  • Yield: 12 puffs

Ingredients

  • 1/2 cup (1 stick) butter
  • 1 cup milk
  • 3/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 4 large eggs
  • Cinnamon sugar (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin well.
  2. In a saucepan over medium heat, melt the butter and add milk. Bring just to a boil.
  3. Remove from heat and quickly stir in the flour and sugar all at once. Stir until a smooth dough forms and pulls away from the sides.
  4. Let the mixture cool slightly, then beat in the eggs one at a time until the batter is smooth and glossy.
  5. Spoon the batter evenly into the muffin cups, filling them about 2/3 full.
  6. Bake for 25–30 minutes, or until puffed and golden. Don’t open the oven during baking!
  7. Optional: sprinkle with cinnamon sugar while warm. Serve immediately.

Tips & Notes

  • Serve warm for the best texture — crisp outside and custardy inside.
  • Don’t overmix after adding the eggs, or the batter may deflate.
  • Great on their own or with jam, whipped cream, or honey butter.
These Nun’s Puffs are light, delicious, and surprisingly easy — the kind of recipe you’ll want to keep forever. A sweet tradition brought back by deesviral!
