Ingredients

  • 6 thin sliced chicken breasts
  • 1 small bag fresh baby spinach
  • 1 large package sliced mushrooms
  • 1 container green onion cream cheese
  • 8 oz shredded mozzarella cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 dash pepper
  • 1 dash herb and garlic seasoning

You can substitute plain cream cheese if green onion flavor isn’t available, adding fresh chives or scallions for taste.

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a skillet, sauté mushrooms in a splash of olive oil over medium heat until softened, about 5 minutes. Add spinach and cook just until wilted. Set aside.
  3. Season chicken breasts on both sides with pepper and herb & garlic seasoning. Arrange in the prepared baking dish.
  4. Spread green onion cream cheese evenly over the chicken breasts.
  5. Top with sautéed mushrooms and spinach mixture.
  6. Pour chicken broth around the edges of the dish to keep chicken moist.
  7. Sprinkle mozzarella cheese evenly over the top.
  8. Bake uncovered for 30–35 minutes, or until chicken is cooked through (internal temp 165°F/74°C) and cheese is golden and bubbling.
  9. Let rest for 5 minutes before serving. Enjoy warm.

Storage & Make-Ahead

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze portions for up to 1 month. Reheat covered in the oven until warmed through.
  • Prepare ahead by assembling dish up to step 6. Cover tightly and refrigerate overnight, then bake before serving.

Why This Recipe Works

  • Low carb friendly: Cream cheese, chicken, and veggies keep it satisfying without pasta or rice.
  • Moist chicken: Broth and cream cheese prevent chicken from drying out.
  • Balanced flavor: Spinach and mushrooms add earthy freshness to the creamy richness.
  • One-pan convenience: Everything bakes together, minimizing cleanup.

Expert Tips

  • Use thin sliced chicken for quicker, even cooking.
  • For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
