Ingredients:
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar (optional)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk (or regular milk with 1 tbsp vinegar/lemon juice)
2 large eggs
1/4 cup melted butter (plus extra for greasing)
1/4 cup vegetable oil
Instructions:
Preheat your oven to 400°F (200°C) and grease a 9-inch cast-iron skillet or baking pan with butter.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk buttermilk, eggs, melted butter, and oil until combined.
Gradually pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing for the best texture.
Pour the batter into your prepared skillet/pan and spread evenly.
Bake for 20-25 minutes or until the top is golden brown, and a toothpick inserted into the center comes out clean.
Let it cool slightly, then slice and serve warm with butter or honey. Enjoy!
Tips:
For a sweeter touch, add an extra 2 tablespoons of sugar.
