Ingredients
- 2 medium zucchini, chopped
- 2 cups cooked chicken, shredded
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream or Greek yogurt
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet, heat olive oil over medium heat. Add zucchini and cook for 3–4 minutes until just softened. Remove from heat.
- In a large bowl, combine shredded chicken, cooked zucchini, sour cream, garlic, Italian seasoning, salt, and pepper. Mix well.
- Stir in half of the mozzarella and half of the Parmesan cheese.
- Transfer mixture to the prepared baking dish. Top with the remaining mozzarella and Parmesan.
- Bake uncovered for 30–35 minutes, or until bubbly and golden on top.
- Let it cool slightly before serving. Garnish with fresh herbs if desired.
