Instructions

1. Prepare the Equipment

  1. Preheat your oven to 160°C (320°F).
  2. Line the bottom and sides of an 8-inch round cake pan with parchment paper. Wrap the outside of the pan tightly with aluminum foil to prevent water from seeping in during the water bath.

2. Make the Cheesecake Mixture

  1. In a heatproof bowl, combine cream cheese, butter, and milk. Place the bowl over a pot of simmering water (double boiler method) and whisk gently until smooth and lump-free. Remove from heat and let it cool slightly.
  2. Once cooled, mix in the egg yolks, vanilla extract, and lemon juice until fully incorporated.
  3. Gradually sift in the cake flour and cornstarch, folding gently with a spatula to avoid lumps. Set aside.

3. Beat the Egg Whites

  1. In a clean, dry bowl, add the egg whites and beat on medium speed until frothy. Add the cream of tartar (if using) and continue beating.
  2. Gradually add the granulated sugar in three batches, beating until stiff peaks form. Be careful not to overmix, as it may deflate the batter.

4. Combine the Mixtures

  1. Gently fold the egg whites into the cream cheese mixture in three additions. Use a spatula to fold from the bottom upwards in a gentle motion to preserve the airiness of the batter.
  2. Pour the batter into the prepared pan and lightly tap it on the counter to release any air bubbles.

5. Bake the Cheesecake

  1. Place the pan inside a larger baking dish and fill the dish with hot water to create a water bath. This ensures the cheesecake bakes evenly and remains moist.
  2. Bake in the preheated oven for 50-60 minutes. Check for doneness by inserting a skewer or toothpick into the center—it should come out clean.
  3. Turn off the oven and let the cheesecake cool inside for 30 minutes with the oven door slightly open to prevent sudden temperature changes, which can cause cracking.

6. Cool and Serve

  1. Remove the cheesecake from the water bath and carefully transfer it to a wire rack to cool completely.
  2. Once cooled, gently remove it from the pan and peel off the parchment paper. Dust the top with powdered sugar for a beautiful finish.
